I'm not sure about the Dutch wagon (NS). But the German ones are not very well matching 2000 - 2018: The DR type is from Deutsche Reichsbahn/DDR. And DDR does not exist any more since 1990. The DB wagons show the logo of epoch III which ended about 1970.

for a 189 with heavy ore-train there is only one possibility:
Two 189 with automatic coupling with 6axle cars (normaly are two of these cars connectet to a double car). For this you need two of these special locos (Roco 68429)

If you can't get them, you can try Roco 73632 an paint the corner yellow (not exactly right). Other 189 do not fit, because they need the large white frontsite.
The typical car, Faals 151 http://dybas.de/dybas/gw/gw_f_1/g151.html (Falrrs 152/153 as double car http://dybas.de/dybas/gw/gw_f_1/g152.html / http://dybas.de/dybas/gw/gw_f_1/g153.html) doesn't exist in H0 gauge, but you can use the older, but similar faals 150 by Roco, which US-Bahner showed you. So, you need rather special stuff. If you can't get them, you could swith to a coal train insted of ore. The use often only one loco and more common cars. For example Fleischmann 5523, Mehano 52877 / 52978 / 58870 etc. And You can use all DB 189

I agree, 6-thousandths go under a double burden, a locomotive with automatic coupling.
